Mexican stuffed peppers






Traditionally these poblano peppers are stuffed with cheese and sometimes chicken and cheese, but since my mother and I are on a restricted diet, we made our own healthier version. ours are stuffed with red and green bell peppers, fresh corn, shiitake mushrooms, onion, carrots, and spinach. its seasoned with cumin, smoked paprika, Hungarian paprika, pepper and salt. sauteed all these together with the spices until translucent and soft.














lined the inside of the peppers with raw spinach, then we mixed the veggies with a couple of egg whites and stuffed the peppers with this veggie mix. We then closed the peppers back up using toothpicks (that's traditional but you can close them up with kitchen twine) we then rolled them in a little four and rolled them in egg whites that were beaten until stiff. 

place the peppers in a hot skillet with a little olive oil. brown all sided. In the meantime take 4 tomatoes chopped roughly along with a half a medium onion  (raw) chopped roughly as well and blend it in you blender with about 1 and a 1/2 cups of water, and 3 cloves of garlic. once this is blended and is liquid, place it in a hot skillet and let simmer with a little salt. (I use vegetable bouillion... 1/2 cube to 1 cube), add the browned peppers to the sauce and let cook 10 minutes over low heat. ENJOY!

Stuffed peppers

Sorry i did not post anything yesterday. The power went out on my block and the next 3 blocks where my mom lives so I had no internet connection and i didnt feel like going back to my house... I live kind of far from my mom and I hate to commute such a long distance. Anyway yesterday I was supposed to make stuffed peppers but actually I made nothing yesterday and just bought a salad... Today, however, I DID indeed start making the stuffed peppers. I've roasted them over an open flame on the stove top and will be going to the market shortly to see what I will stuff them with. stay tuned! P.S. I am on a vegetarian diet to help motivate my mother to eat healthier so her cholesterol levels will lower, however i have been craving lamb.. MMMMMM!! anyway these will be vegetarian stuffed peppers.

AWESOME DREAM!!


Last night I was dreaming that I was in DUBAI!! wow it was a GREAT dream. In my dream I was there for business. Somehow I was on the phone updating promotions for Mr sexy Omar Borkan. It was such a nice dream. lol felt soooo real. Ok my goal is to go to Dubai before I die. lol.

vegan meatloaf with homemade mushroom gravy

Today I made meatloaf... vegan... with mushroom gravy that I made myself using shiitake mushrooms, onion, red wine, and some rosemary.

I used that last bit of left over wild rice as a side.

Tomorrow will be stuffed poblano peppers!!! I LOVE stuffed poblano peppers!

I did take pictures with my phone however now I cant find those pictures because my phone cant detect them... it may have to do with a new camera app i downloaded. I will post the pictures if i am able to get them. Thank you all for visiting!

Tofu goulash over wild rice

Tofu goulash

Take firm tofu or extra firm or medium firm... as long as it's some kind of firm tofu; remove the water from the packet and freeze the tofu over night. next day, microwave the tofu for 5 minutes and squeeze the water out by using 2 flat surfaces on on top and one on the bottom. turn the tofu block over and microwave for 4 minutes on that side. let cool and squeeze remaining water out.
once tofu is cool enough to handle cut it up in cubes and dry the tofu cubes in a hot pan until golden brown on the outside.
remove from pot and set aside.
take 1/2 a yellow onion and dice it. take 3 garlic cloves and chop it finely.
in that same pot, add some olive oil and add the diced onion and garlic.. cook until soft with a little salt and pepper but don't let brown. once onions are soft and translucent, add a bunch of paprika, about 1/4 cup. adjust more or less if you need to. stir onions a little with the paprika for 2 minutes. Add a tiny piece of vegetable boullion being very careful not to add to much because you've already added salt at the beginning with the onions. stir for 1 minute. add 1 quart of water and let simmer until mixture has reduced 1/4 . Add the browned tofu back to the pot and cook until mixture has thickened to your liking.  serve over whatever. I serve it over wild rice. or brown rice.

Alright my wild rice is done after over an hour. 1 part rice to 4 parts water. boil water separately, season to taste, add rice let simmer covered for 45-50 minutes or until water is absorbed completely. fluff with a fork and enjoy as a side or by itself. It's that good!

Hi everybody!!! Aright, I just got the wild rice on the stove and it will be cooking for a while. I like to keep my rice in glass jars. I like glass jars :) Keep your rice in a dry place. So if you don't know what wild rice looks like, here is a picture. When it is fully cooked the grains split open from the sides and the middle. I'll post a picture of the cooked rice.

Lots of watermelon

I bought this watermelon about a week and a half ago and I normally dont eat the fruit I buy right away because I like to let the fruit I buy just sit out and ripen. It works really well with pineapples and stone fruits; also works well with watermelon and melons as i found out. check out this color. Very tasty and sweet too. I will be making watermelon salad with it later.

So pretty!!!

My mom and I decided to go take a walk in the neighborhood and we saw this pretty flower so i had to take a picture of it. My mom LOVED the picture and the flower. :) not sure what this flower is called though.

I want to make THIS!

Morning veggie juice!!

Happy MONDAY EVERYBODY!!!!!!!
This is what my mother and I have before breakfast every morning.
We make a vegetable juice mixed with fruit
INGREDIENTS:
Kale
Spinach
Beet
Green apple
Orange
Carrot
Celery
Plum
White or yellow nectarine
Whate or yellow peach
Broccoli

Basically you add as little or as much as you want of each ingredient. Blend it all together with some natural sugar free juice of your preference. If you need to strain it, please do so. serve cold. I am not kidding this juice every morning, will leave you super satisfied and you wont feel hungry for a good 3 to 4 hours. its awesome and super nutritious.  the picture of this juice is my mom's juice she had drank half of it and then I remembered I needed to snap a picture of it. ha ha ha ha ha!!

Weekend Drink!

Alright summer is still in and we need a refreshing drink to cool us off so I made this "Agua fresca" fresh water. basically water flavored with fresh fruits. In this case, I made a lemongrass, pineapple and citrus fresh water with a hint of fresh mint from my mother's garden. It's easy to make just take fresh lemongrass which i got as well from my mom's garden, your favorite citrus fruits, i got fresh orange and lime, fresh ginger, and pineapple. I blended all these ingredients together and strained it. added it to an iced large jar and threw in fresh pineapple chunks, fresh mint leaves and orange slices. VERY good! sweeten it  to taste and viola!! you've got "AGUA FRESCA" enjoy!

Ingredients:
Water
Ice
Fresh Lemongrass
Fresh Orange
Fresh Ginger
Fresh Lime
Fresh Pineapple
Fresh Mint
Sugar to taste

Weekend movie!

Hi everybody!!! I hope you are all having a wonderful weekend. Ok so the weekend movie I have chosen is... Life is beautiful. This film si soooo sad but sooo sweet and just all around GREAT!! Its an older movie by Roberto Benigni, one of my favorite Italian actor, screen, wrtiter, and director.

In 1939, Guido, an Italian Jew, falls in love with Dora, who isn't Jewish. He woos her away from the Fascist official she has been dating, and they get married. Their son Giosue grows up among growing anti-Semitism. As the war progresses, Guido and Giosue are arrested and taken to a concentration camp. Dora goes too, determined not to separate the family. In the midst of the horrors of the camp, Guido protects his son by pretending that survival in the concentration camp is an elaborate game with which Giosue must play along or be sent home.

chickpea soup

My mother made chickpea soup. My mother just boiled the chickpeas with a little salt and pealed them. so that was her soup but I cant eat something so plain as boiled chickpeas and broth. I jazzed it up a bit and served myself some of my mother's plain chickpea soup and added fresh avocado, tomato, yellow onion, and a pinch of dry oregano. It was a fantastic combination!!

veggie burger

ok so my veggie burgers didnt turn out how I wanted but they were very good. I just couldnt grill them because they would stick to the grill and crumble so I grilled them on an aluminum foil sheet an they turned out very tasty even though they didnt hold together very well. The picture above is a picture of the raw veggie patties I made. The picture below is the beginning stages of the mushroom sauce i made with a little rosemary and some stella rosa semi sweet red wine. It turned out better than I expected!!

Goat meat stew with mommy!

This past Sunday my mother and I went out to have some BARBACOA basically a Mexican goat meat stew. IT WAS AMAZING!!! My mom only eats that when she goes to Mexico because its very difficult to find good barbacoa here in the states but man this place nailed it!!!!!!! it was awesome!!

On Today's menu!!

GRILLED VEGGIE BURGERS!!!!!!!!!
 Today I am making grilled veggie burgers over mesquite charcoal ! the mesquite will give a a nice smokey rich flavor. I cant wait! pictures coming soon!

My Roasted tomato soup recipe

3 lbs roma tomatoes or any nicely ripe and red tomatoes from your garden or store bought. (cut these in half)
1 yellow onion (cut in chuncks)
8 cloves garlic
4 sprigs fresh rosemary
5 fresh basil leaves
olive oil
1 vegetable bouillion cube or 1 quart of vegetable or chicken stock
smoked paprika to taste
salt and pepper to taste.

preheat your oven to 400 degrees
on a baking sheet lined with aluminum foil, place the tomatoes, garlic, rosemary, onion and drizzle with olive oil, salt and pepper. toss until all vegetables are completely coated. place tomatoes cut side up otherwise with the heat of the oven all the juice will fall out and evaporate and you have no flavor...
cook tomatoes for 45 minutes
while this is cooking heat up the chicken stock, or vegetable stock. If you are using the boullion cube, add the cube and smoked paprika to 1 quart of water... season to taste, add salt and pepper to taste and bring to a boil turn off fire.
once tomatoes are cooked, let them cool
once cooled, blend this entire mixture together everything, the onion, tomatoes, garlic, rosemary AND add the basil leaves
once blended add this to the chicken or vegetable stock. turn fire back up to medium and bring to a simmer for 45 minute. adjust seasonings and thickness if needed by adding more stock

NOTE: I added a little mexican twist to my soup by adding a little heat. I added dry red chilies so feel free to add some heat to yours by adding chilies during the 1st 45 minutes of boiling. remove the chilies before you blend the tomatoes. ENJOY!

serve nice and hot garnished with fresh basil cut in ribbons and accompany this soup with toasted french baguette, or with a grilled cheese sandwich or with some salted crackers.

As I said in a previous post, I am going on a healthier diet with my mother. Today I am making roasted tomato soup! I will give you the recipe in a bit here are some pictures... I used tomatoes from my mother's garden! they are soooo good!

WEEKEND CUTIE!!! ALONSO MATEO!!!

Hi everybody!! I hope you all had a wonderful weekend!! Sorry I haven't been posting too much stuff; I've been very distracted with other stuff. Anyway, this week I am presenting a SUPER CUTE KID!!! I mean cute in an adorable I wish he were my son type of way. His name is Alonso Mateo.
He hails from Monterey, MEXICO. Currently resides in Laguna Beach, California, with his mommy, a Mexican designer. Alonso is only 5-6 years old and had already taken the internet by storm with his fashionista taste in clothes, modeling skills and just because he's soooo darn cute!!! Everything he wears is a name brand item such as Gucci, Dolce and Gabbana and so forth... Kids like this one make me want to have kids of my own so I can dress them up this way. Of course not all kids allow their parents to dress them as they want because then some kids start pulling on their clothes taking some of it off, and throwing a tantrum but Alonso Mateo seems to really enjoy it! Take a look at this little fashionista that already has thousands of instagram followers and even a fan page!!! I absolutely cant get enough of this kid!!!
