Art of Latte

Anybody else not care?


Is anyone else sick of hearing about the royal wedding? I am sooo tired of the media shoving it in my face when i simply dont care for this royal wedding thing. Seriously, they are not the only couple in the world to get married. WHO FREAKIN CARES!!!!!

MY FACE IS RED!!!


Yesterday I headed out to venice beach and decided not to wear sunblock so that I get a tan... BAD IDEA!!! now I am super red and in pain LOL but i'll have my nice tan once I start to get better LOL! anyway I walked from venice beach to the santa monica pier and back to my car in venice... that was a hell of a walk considering i was in flip flops LOL!
anyway if you know any tips to tame the redness of my sunburn, pls let me know.. ok more posts coming soon! hope you are all doing super well! the weekend is almost here!

HORMONES SUCK!!

I"ve been working out like crazy for the past couple of months.... my motivation? well I made a bet with Laila who could get in shape by the end of july... I personally want my six pack by then. I've been working out twice a day everyday for the past two months I am in great shape but lately my workouts seem to be week and for the past two weeks they've been almost not existent. I suddenly got extremely lazy and have had headaches... So I asked my uncle ray (Dr. Alexander) about it. He said my hormones are off balance and that I need to wait until they get back to normal on their own. THIS SUCKS!!! I NEED TO GET BACK TO MY HARDCORE WORKOUTS I DONT HAVE TIME TO WAIT!!!!! MY SIX PACK IS NOT GOING TO WAIT FOR ME SO I NEED TO GET BACK TO MY NORMAL WORKOUTS ASAP!!!! hormones suck!!!!

Albóndiga FAIL

I was making my Albóndigas, and they were looking great until the broth started boiling... THEY COMPLETELY FELL APART IN THE SOUP AND IT WAS A HORRIBLE MESS!!!!! I AM SOOOO SAD BUT IT'S STILL DELICIOUS!!!!! ha ha ha ha ha ha!!! ok so I have this pot of tasty mush but I will attempt to do this again in a couple of days... I have to think of a way to make the Albóndigas not fall apart while they cook... hmmmmmm....

My first attempt


Hi everybody!! ok so i am off today and I have decided to attempt to make vegan albondigas!!!!!! (spanish for meatballs) sounds easy? there's a twist.. these meatballs will be cooked in a broth mexican style. yes cooked in a broth no meat, no egg... using beans rice and tofu with some spices as well.. I'll post some pictures as I make it. see you all in a bit!! in the meantime here is some info on albondigas!

Mexican meatball soup. A totally soul satisfying meal in a cazuela. Al-bund-e-gaas or meatballs, derived from an Arabic word for hazelnut or small round object, al-bunduq, according to Wikipedia. Albondigas are a variety of meatball that is common in Spain and Latin America. Although their origin is not certain, culinary researchers believe that the recipe was derived from an Arab dish that was taken to Spain during the Muslim occupation. Albondigas are a popular appetizer that are served in a tomato sauce; in Mexico, the meatballs are more commonly served a light broth with diced vegetables.

Meatballs are a popular food in many cultures throughout the world. In the United States, they are common in spaghetti and other pasta dishes, usually served with a tomato sauce. In Portugal and Brazil, they are fried and served on a bed of rice, and in Sweden, they are usually served with buttered noodles or boiled potatoes. Swedish meatballs are generally much smaller than the American and Italian varieties, which may approach the size of a small orange. Very large meatballs are often served singularly, whereas smaller varieties are usually served in a cluster on a starchy bed.

HAPPY EARTH DAY!!!!!!


ALRIGHT EVERYBODY!! HAPPY EARTH DAY! Earth Day is a day that is intended to inspire awareness and appreciation for the Earth's natural environment. Earth Day was founded by United States Senator Gaylord Nelson as an environmental teach-in first held on April 22, 1970. While this first Earth Day was focused on the United States, an organization launched by Denis Hayes, who was the original national coordinator in 1970, took it international in 1990 and organized events in 141 nations. Earth Day is now coordinated globally by the Earth Day Network and is celebrated in more than 175 countries every year. Numerous communities celebrate Earth Week, an entire week of activities focused on environmental issues. In 2009, the United Nations designated April 22 International Mother Earth Day.
On that note, Happy earth day!!! YIPPEE!!!!!

my aunt's in town~


so my aunt came to L.A. to visit from Texas. Yesterday we took a walk on docks of Marina Del Rey. It was nice. We took more pictures but for now this is my favorite ha ha ha ha ha LOL the bottom picture is me and my mom... really bad picture of both of us but whatever LOL

an 11 hour flight from san francisco, ca. to paris is time elapsed to a few minutes... in the process he captured amazing views of the polar regions and flew through the aurora borealis capturing the amazing northern lights pretty awesome!!! check it out!!

Alaina... again :)



Okies, so here's a little more about Alaina & her National American Miss journey! She was chosen to participate in the Princess division of the competition. Her training session is this weekend & we're excited! I'm hoping that she will gain confidence from the experience because she's terribly shy. We're praying about that though & I know God will help her through it!

Anyway her photos, above, are from her casting call that was held on March 13. The first photo are of my angel with the present NAM Louisiana Junior Teen winner, Miss Mirandy Li! The second are of her & former NAM winner, Miss Chelsey McGinnis. Chelsey currently works for Disney Channel on the TV show "Shake It Up"! Chelsey also just finished recording a video with Lil' Wayne. They are both very sweet & we enjoyed meeting them!

Alaina plans to enter the modeling, photo & art competitions in the pageant. For her community involvement project, she is supporting the Juvenile Diabetes Research Foundation. Alaina - Petite Miss Iberville Cajun Queen!



Ok guys, I promised to post & here I am! Currently, my little girl is participating in a pageant - National American Miss! This past weekend, she got great practice participating in a local pageant at her school! The 2011 Iberville Cajun Queen Pageant was held at her school. She competing in the Petite Miss division & placed 2nd! She was really excited because she's dealing a lot with being very shy so she didn't think she would place at all! Long time no see, but it's me LOL... That's right, SoLo is back - perhaps for a limited time BUT then again... you never know! Either way, good to be here! IF THE BLOG LOOKS STRANGE...

just a heads up, if the blog looks strange, that's because I am in middle of giving it a makeover so pls excuse the strange look and cut off picture and title LOL

Yummy corn salsa


check out my corn salsa. I had some corn that I bought that I hadnt used in a week and a green bell pepper and an orange bell pepper... I have a lot of limes that my aunt gave me so I decided to make a salsa with this corn and bell peppers.
I boiled the sweet corn and cut off the kernels. I put them in a large mixing bowl and took my bell peppers and roasted them direct flame on my stove top. once charred, I peeled the skin, chopped them and added them to the mixing bowl with the corn. Next I took about 3 canned chipotle peppers and chopped those as well. I love how smokey these are. The flavor of these are AMAZING! I next I took some red onion... looks purple to me but it's "red" onion LOL and I diced that, then some cilantro... I love cilantro; we use it a lot in Mexican cuisine. I chopped the cilantro and added the chopped chipotle, red onion, and the cilantro to the large mixing bowl with the corn and bell peppers and squeezed some lime juice into the mixture and added salt and pepper to taste... DONE! corn salsa... it was pretty damn good! I still have a lot left LOL

awesome lasagna


I've been cooking a lot lately... I have been exercising so much lately that I get hungry soooo fast and so often so I find myself cooking a lot more. LOL and eating so much that you wouldnt believe how much I eat ha ha ha ha ha I eat even when I am not hungry just because I know I'll be hungry soon LOL anyway that's ok because I can feel my exercise working! I am working on a girl six pack on my stomach and I can almost see it!! YAY!!! ok back to the post... anyway I made a vegetarian lasagna and it was amazing!!! check it out. LOL oh I didnt use pasta... Instead I used sweet potato and zucchini! great stuff. I layered it with pinto beans, cauliflower, green beans, russet potato mashed with turnips then blended together to make a creamy sauce using water and a vegetable bouillon cube. then the tomato sauce, some mozzarella cheese, basically every vegetable that I had in my crisper for days waiting to be used LOL it was delicious. apparently my carnivore sister said it was the best lasagna she's had in her life!! This girl does not like anything that doesnt have meat in it and if she loved my lasagna.. I am pretty happy! LOL

beautiful plum!


Nothing makes me happier than super sweet ripe fruit!! this plum I bought at my favorite grocery store... trader joe's of course and I let it ripen on my kitchen table for a few days.. when I finally had a chance to slice it, wow the color was so beautiful!!! super good! I added a piece of this plum to my greek yogurt breakfast. it was awesome!

Ok so I was off from work yesterday and I made some tofu goulash. I LOVE goulash!!!... except without the meat LOL yes it sounds stupid because it IS a hungarian meat dish but I make mine with extra firm tofu. it's delicious and the texture is wonderful!!
ok i just had to share this with you... i'd give you the recipe but i do it all by taste... lol

my favorite breakfast





this is by far my all time favorite breakfast... GREEK YOGURT WITH DRIED FRUIT AND HONEY!!! AND SOMETIMES A LITTLE EXTRA VIRGIN OLIVE OIL AND A SPRINKLE OF SEA SALT!!!
I am telling you this is soooo delicious you will be addicted to it.

here I have 1/4 cup of plain greek yogurt( my favorite yogurt on the planet)
1 large dried date
3 small dried figs
2 large dried turkish figs
4 raw almonds
2 slices of blood orange
3 slices of clementine
1/4 of a super ripe plum.

chop all ingredients in small cubes and put them on top of
your plain greek style yogurt and drizzle with a little honey or
extra virgin olive oil. If you want, you can add a tiny pinch of sea salt.
